I decided to be brave today and cook without looking up [Googling] recipes. I wanted to make something that would be delicious, nutritious, and with little failure rate. This is what happens when you’re 23 and have never really cooked before. (I still Google how long it would take to boil eggs– judge me, if you will, but I know you all do it too!) I was talking to someone about how I didn’t know how women back then did it. Just cook without looking up anything. What was life before Google like? haha. So I decided to make spicy [because I love it spicy food] turkey stuffed bell peppers. I thought to myself, “you really can’t screw this up because it’s literally so easy!
Ingredients:1 package of ground turkey (21g of protein for those fitness people!)
Two red peppers
2 carrots that I shredded using a grater.
Half an onion
Handful of spinach
Parmesan Cheese
Sea Salt
Pepper
Ground mustard
Chipotle seasoning
Cheyenne pepper
preheat oven to 350
dice your peppers into halves. I did it the long way because I felt that these red peppers were really long so if I did it the normal way, it would look weird.
Mix your turkey, shredded carrots, seasonings and diced onions together in a bowl. I then browned my little mixture on a skillet because I don’t trust my oven to cook the turkey straight through, lol.
While my turkey mixture was browning, I aligned the bottom of the peppers with spinach and sprinkles of parmesan cheese.
PROCEED TO STUFF THE PEPPERS!
I used coconut oil to grease the pan lightly before placing my peppers on top.
Lay them on the baking sheet (pan?) and put it in the oven for 45 mins!
Pour some sirachi sauce on the bottom and sprinkle fresh parsley up top and BOOM! YUM!
